Recipe : Broccoli Salad II

Ingredients
5 cups fresh chopped broccoli
1 pound bacon - cooked and crumbled
1 cup raisins
1 cup mayonnaise
1/2 cup white sugar
2 tablespoons white wine vinegar

Directions
Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Crumble and set aside.
In a large bowl, combine the broccoli, bacon and raisins.
Whisk together the mayonnaise, sugar and vinegar. Pour dressing over broccoli mixture, toss and refrigerate.

Recipe : Blender Macaroni and Cheese

Ingredients
2/3 pound uncooked elbow macaroni
10 ounces extra-sharp Cheddar cheese, cubed
1 1/2 cups hot milk
1/4 cup all-purpose flour
1/2 small onion, cut into chunks
1 tablespoon Worcestershire sauce
1/4 teaspoon black pepper
1/2 teaspoon salt
1/2 teaspoon dry mustard powder
1 pinch garlic powder
1/4 cup toasted wheat germ
1/4 cup grated Parmesan cheese

Directions
Preheat oven to 350 degrees F (175 degrees C). Butter a 2-quart casserole dish.
Bring a large pot of lightly salted water to a boil. Add macaroni and cook for 8 to 10 minutes or until al dente; drain well and pour into prepared casserole dish.
Meanwhile, place the Cheddar cheese, hot milk, flour, onion, Worcestershire sauce, pepper, salt, mustard powder, and garlic powder in the bowl of a blender. Blend until cheese is melted and onion is finely chopped.
Pour cheese mixture over macaroni. Sprinkle top with wheat germ and Parmesan cheese. Bake uncovered for 30 minutes.

Recipe : Apple-Honey Dutch Baby

Ingredients
3/4 cup all-purpose flour
1 tablespoon sugar
3/4 cup milk
2 tablespoons butter or margarine
2 large apples, diced
1 tablespoon butter or margarine
1/2 cup honey
2 teaspoons lemon juice
1/2 teaspoon ground cardamom
1 teaspoon cornstarch
2 teaspoons cold water

Directions
In a mixing bowl, whisk the flour, sugar, eggs and milk until smooth. Place butter in a 10-in. ovenproof skillet. Heat at 400 degrees F for 3-4 minutes or until melted; tilt pan to coat bottom and sides. Pour batter into hot skillet. Bake for 16-20 minutes or until edges are lightly browned.
Meanwhile, in a saucepan, saute apples in butter until lightly browned. Stir in honey, lemon juice and cardamom. Combine cornstarch and water until smooth; add to apple mixture. Bring to a boil; cook and stir for 2 minutes or until thickened. Spoon into pancake. Serve immediately.

Recipe : Apricot-Nut Drop Cookies

Ingredients
3/4 cup butter flavored shortening
1 1/4 cups packed brown sugar
2 tablespoons milk
1 teaspoon vanilla extract
1 3/4 cups all-purpose flour
1 teaspoon baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt
1 cup chopped dried apricots
1 cup chopped pecans

Directions
In a mixing bowl, cream shortening and brown sugar. Beat in egg, milk and vanilla. Combine dry ingredients; gradually add to creamed mixture. Stir in apricots and pecans.
Drop by rounded tablespoonfuls 3 in. apart onto ungreased baking sheets. Bake at 375 degrees F for 10-13 minutes or until light golden brown. Cool for 2 minutes; remove to wire racks.

Recipe : Becky's Easy Cilantro Lime Rice

Ingredients
1/2 onion, chopped
1 (4 ounce) can green chilies
1 tablespoon minced garlic
1 lime, juiced
1/2 bunch cilantro, chopped
3 cups water
4 teaspoons chicken bouillon granules
1 teaspoon salt
1 tablespoon butter, softened
3 cups uncooked instant rice

Directions
Blend the onion, green chiles, garlic, and lime juice together in a food processor until smooth; add the cilantro and pulse until the cilantro is finely chopped into the mixture.
Bring the water to boil in a saucepan. Stir the cilantro mixture, chicken bouillon granules, salt, butter, and rice into the water and return to a boil; reduce heat to medium-low and cover. Simmer until the rice has absorbed the liquid entirely, about 20 minutes.
